Mediterranean Chicken Kebab

A healthy, high protein recipe for some of the best chicken kebabs. Packed with natural flavors and marinated in Greek yogurt to create a crispy, savory crust and a soft juicy center.

Ingredients

Serves ~6 People
  • 1 Large Package – Boneless Chicken (Breast = healthier, Thigh = more flavor)
  • 1 Cup – Plain Greek Yogurt
  • 2 Tbs – Olive Oil
  • 2 Tsp – Paprika
  • 2/3 Tsp – Cumin
  • 1/4 Tsp – Cinnamon
  • 1.5 Tsp – Red Pepper Flakes (increase/decrease depending on spice tolerence)
  • Zest and Juice of One Lemon
  • 2.5 Tsp – Salt
  • 2/3 Tsp – Ground Black Pepper
  • 2 Tsp – Minced Garlic (or 1.5 Tsp Garlic Powder)
  • 2/3 Tsp – Ground Black Pepper
  • 1 Large – Red Onion
  • 1 Large – Green Bell Pepper (Optionally 1 additional yellow/red pepper)
  • If you like spice add some chili and or cayenne (I recommend it!)

Preparation

Prepare the Skewers
  1. Collect your skewers and place them in a water bath for at least two hours (ideally overnight).
  2. Chop your onion and pepper(s) into approximately 1 inch square pieces
  3. Pat the chicken dry with a paper towel and chop it into roughtly 1 inch cubes
  4. Remove your skewers from the water bath and alternate skewering onions/peppers
Marinate
  1. In a large mixing bowl, stir and combine all remaining ingredients
  2. Use a sauce brush or a spoon to cover all parts of the skewers in the marinade
  3. Place in a cold place for at least 4 hours (ideally overnight)
Grill
  1. Remove the skewers and let warm to room temperature
  2. Prepare the grill with nonstick spray, and place the skewers on the grill
  3. Grill each side until you achieve a healthy charring on all parts and the chicken is just cooked through

A good sear means a few char/burn marks – this is where the greek yogurt marinade gives the best flavor!
